今回の関西への小旅の最大の目的はフレンチ界の巨匠 吉野 建オーナーシェフが和歌山市内を一望出来る12Fの天空フロアに店を構えられ手島純也シェフが腕を揮われるガストロノミー・フレンチレストラン『hôtel de yoshino』さんへの訪問の為と言っても決して過言ではありません。吉野 建オーナーシェフと手島純也シェフお二人が御揃いで和歌山の『hôtel de yoshino』さんで料理を造り供されるのは年に一度あるか無いかと伝えられており、その稀少な数少ない機会に合せての友人の御招きにより今回の関西への小旅を決行をしたのでありました。料理は和歌山県産の『九絵(クエ)』の『Tete de fromage』のアミューズからスタートです。絶妙な軟骨の食感のアクセントと八朔(ハッサク)の酸味が食欲中枢を刺激してくれました。スープはその和歌山産の『九絵(クエ)』を使い造られた『九絵(クエ)のコンソメ』と『ジビエのコンソメ』の二種のコンソメの何とも贅沢な味比べです。澄んだ鶏スープ『Consomme do Volaille』を下支えにして作られたと想像される『九絵のコンソメ』は綺麗に澄んだ上品な味わい。一方の『ジビエのコンソメ』は全く雑味の無い深みがあり円やかな味わいに仕上げられており香りづけにフランス産の『黒トリュフ』が削り掛けられたもので余りの美味しさに身震いを覚えた程。オードブルにはフランス産の『フォアグラ』と『無花果(イチヂク)』のプレッセです。何と美味しいのでしょう。これぞ正に筆舌に尽くし難い美味しさという言葉が相応しい味わいでした。そしてポワソンには皮目をカリッカリに仕上げられた『九絵(クエ)のロースト』sauce vin blanc、身が引き締まった筋肉質の弾力の九絵にしっかりと火は入れられているのですが中はしっとりしてパサつくことなど無く夢中でいただきました。そしてヴィアンドには和歌山産の『仔猪(コイノシシ)』の背肉のローストです。肉の断面の色合いの美しさ。塊肉への火入れはドンピシャ。仔猪のジュと濃厚でありながら角が取れた円やかな味わいのソース。圧倒的な美味しさに感動を超えた何とも言葉では表せぬ気持ちになりました。これが完璧なローストということなのでしょう。自分の経験値では活字にすることもままなりません。そしてデセールの『タルトシトロン』の温感と冷感の異なる2つの温度感と絶妙過ぎる酸味と味わい。濃い味の料理の後にはこのくらいの味のデセールが良いんだと感じさせられました。そして何よりも目も美しいビジュアルに完全に言葉を失いました。正に至福で口福な時間を過ごさせていただき感謝の言葉しかありません。アペリティフの地ビール『HEIWA CRAFT WHITE ALE』からビンテージものの『Segondine Laurence Brumont Madiran Haut Lieu2009』まで料理とのマリアージュを楽しませていただきました。持つべきは友。友人の御蔭でとても良い勉強の機会を与えていただきました。
