競輪場前で降りて暗い道をGEJOさんへ。
昨日も来ているので迷わなかった。
GEJOさんは御料理ふじ居さんの斜め前だが、
昼間は気がつかなかった。
外観は古い町家で趣があり、店内はカウンター席
とテーブルが2卓あり、カウンターはほぼ満席、
テーブル席も1組、土曜日の夜とはいえ、人気が
あるのですね。
カウンターの一番奥に招じられた。
大将にごあいさつすると、時間はありますか?
ドリンクはメニューがない。
種類とおおよその価格が示されているだけだ。
ペアリングもあるが単品でいただこう。
先ずは先客が飲んでいたグラスシャンパーニュを
オーダーした。

シャルドネ、(Champagne Janisson & Fils Brut Tradition )。
ブドウはシャルドネ70%、ピノ・ノワール30%の
ようだ。

こりこりとして甘く美味しい。

フェンネルの花、アブラナの芯の部分のなばな
柚子。
大沢野には有機米や平飼い卵を生産する土遊野と
いう農業法人がある。
満寿泉プラチナの酒粕に漬けた越中バイの肝
甘鯛の炙り、砺波のコシヒカリに赤酢
冷酒はオーク樽で熟成させたお酒をブレンドした
沙石オリジナルの満寿泉純米大吟醸MV98
カワハギの肝、あん肝風
冷酒はDo you know 土遊野
「土遊野」の棚田にて有機栽培されたイセヒカリ
を使用して満寿泉の蔵で醸した純米大吟醸
ほんのりとした甘みと爽やかな酸味がある。
ここからお寿司です。
シャリは土遊野の棚田で栽培された有機米
イセヒカリとのこと。
