JR北千住駅から徒歩5分ほどの下町割烹とめだては大踏切近くにある割烹。運行本数が多い常磐線快速と東武線の線路なので踏切が開かないことも多い。時間に余裕が無いなら東口からのアクセスをオススメする。これがaccess green!
土曜に予約して伺うとカウンターとテーブルで16席の店内はほぼ満席。カウンター席に案内され、予め料理は頼んでいるのでお酒を選べばOK。

うすはりタンブラーで提供されるビールはキンキンに冷えてやがる。

・先付け
漬物3種は枝豆、茗荷、胡瓜で、特に茗荷の赤が鮮やか。
鰹のペーストと焼油揚げはバゲットにレバーペーストの雰囲気。ホールピンクペッパーがアクセント。ボトルワインを注文したくなるけど少し様子を見よう。
・お造り お刺身盛合わせ スズキ、ミンククジラ、ミズダコは塩で。
鯨にタコって変化球にビックリ!鯨は臭みが無く良質。タコはムチムチで塩が合う。これは日本酒追加でしょ!

馴染みのある山形だけどこのお酒は初めて。フルーティでウマイ。
・お椀 蛸の飛龍頭のお椀
上品な出汁に日本酒を飲み干してしまったのでお酒を追加。
*レモンサワー480円(税抜)
安いお酒も用意してくれているところに好感が持てる。これは焼酎が濃くて量もあるのでオススメ。
・炒め物 栄螺とエリンギの蟹味噌炒め
栄螺の苦みと蟹味噌の旨みを合わせて一本。ソースが美味すぎてバゲットを添えて欲しいほど…というかパスタにしても良いくらい。
・肴 半熟卵と練り雲丹
練り雲丹と黄身って相性良いなぁ。うに丼でウニが少ない時は半熟玉子を添えるが正解かもw。
・煮物 和風ロールキャベツ
珍しい油麩を添えて。和風の出汁とパンパンに詰まったロールキャベツがウマイ。
・食事 鮎ご飯、赤出汁、お新香
焼いた鮎に別添えで肝。この苦みの演出がたまらん。汁は赤だしで濃厚なのがまた良い。
・甘味 桃とパインのカスタード
フレッシュな桃を使ったデザートが嬉しい。
この日は満席だったので、ご主人一人で切り盛りする厨房も大変だったのだろう。コースのラストまで3時間近くかかってしまった。料理はシンプルから技巧を凝らしたものと硬軟織り交ぜ客を飽きさせない工夫に富んでいる。特に半熟卵と練り雲丹は組み合わせの妙を感じた。割烹ではなく下町割烹の面目躍如というところだろうか。
