今更ながら、さすがに上しゃけは、とりわけ美味♪

◆出色の一皿 鮭バターライス(赤)
飾り気のない武骨なルックスである。
鮭の身をほぐし、
ケチャップを加えたバターライスと和え、
パセリを一振り。
これが実にウマい!
鮭とバターの相性は言わずもがなだが、
やはり鮭そのものの
味のポテンシャルに驚かされる。
部位ごとの硬軟、皮目の香ばしさ、身の密な美味しさが
一噛みごとに様々な味わいを見せる。
ライスはバターの旨みをたっぷり含み、
所々に忍ばせた、おこげのクランチ感が心憎い。
陰で支えるのがケチャップの妙味。
脂ののった鮭に掛け合わされたバターライス、
くどくなりかねない味の強さを、
ケチャップのほの甘い酸味で
さっぱりした後味に。

◆出色の一皿 鮭の塩焼き 〜旅館のおめざで食べたい極上のしゃけ定食〜
出来るものなら、
旅先の宿で迎えた爽やかな朝に、
この定食を食べたい(笑)
主役の北海道の天然鮭は
つやつやとピンクに輝き、
半生の中央がほんのり紅を挿している。
皮目はパリッと焼き上がり、
その香ばしさが粒塩と共に弾ける。
身は綺麗に脂がのり、
繊維に沿って箸で
優しくはんなりとほどける。
噛み締めると
きしきしと音が立つような、
締まった鮭の肉は、
ストレスのないたおやかな甘みを含んで、
ただただ美味(*゜▽゜*)!

小津安二郎の映画を彷彿とさせる
レトロ&おしゃれな昭和の空間に
ホッとさせられる。
気働きのできる女性スタッフの
笑顔もまた癒し☆
鮭の粕鍋があるようなので、
次回は夜に再訪して、
日本酒を飲みたい。
