半年振りの小笹でご無沙汰してしまった。
17時の口開け一番乗りで親方に挨拶していつもの席に♫
真新しい種札があったので親方にうかがったところ、何年か振りに春子を仕込んだのだとか。
いつからやっていないかわからないと言う位ご無沙汰で、常連さんもご存知無い方ばかり。
他にも終盤の子持槍烏賊や白魚等春の魚を愉しませて貰った。
吉田カレーの後だったので、腹持ちの良いカレーであまりお腹が空いていなかった事も有りでいつもより少な目の注文だが、十分に満足できた。
シャリも温度、炊き加減に調味加減も抜群。
最後の余韻でフワンと酸味が柔らかく来るシャリはどの種にも合う良妻賢母の味だ。
握りはネタにシャリを乗せて返してから2手でほぼ仕上げる燻し銀の業。
捨てシャリなんぞ一度たりとも無い、ネタに合わせて一発で必要量を掴み取る技量。
もちろん口の中は春の花、桜が散るが如しハラリと散開す。
何度も握り返していて打開策が見つからずに悩んでいる鮨職人は是非西川さんの握る姿を観て勉強されると良い。

真鯛潮汁
鰹と鯵は刺身で戴いたが、これから益々美味しくなる魚。
特に鰹は当方が注文した途端雪崩を打つ様に皆さんも注文され、18時前に品切れに。
この時期の真鯛は脂の乗りもクドく無い適度な物となり、左程熟成させていないのに身の熟れ方が半端無く良いのでシャリとのマリアージュが完璧なのだ。
腹の身から切り付けていくため早い者勝ちなのだが、フレッシュなモチっとした弾力に身の熟れを併せ持つ素晴らしい仕事。
真鯛の握りでこれ程分厚いのにシャリとの一体感があり、素晴らしい味を醸し出す店もそうは無いであろう。
鯛繋がりで春子を一貫。
塩と酢の〆は軽くで柔らかく瑞々しい春子もシャリとのマリアージュが完璧。
〆の酸味と少々の朧を噛ませることで、春子の身の旨味や脂を感じさせてくれる。
これ、毎年やれば良いのにね〜といったらたまたまやってみようと思う気になっただけなので、もうやらないかもと(笑)
煮いかは終盤だが柚子皮を刻んで別皿で提供されたツメに散らされ、柚子皮エキスがツメと合わさって得も言われぬ味わいだ。
煮いかといい穴子といい、素材本体の旨味が低減状態の今時は、ツメが本領発揮して足りない部分を補い、威力を増すのだ。
次回は穴子の雉焼きが再開された頃合いをみて鳥貝なども愉しみたい
