江戸前三大暖簾に肩を並べているであろう此処は明治17年(1884年)創業の老舗。その歴史からみても随所に「藪」色が見られる。貴品ある外観は東京都選定歴史的建造物に指定されている木造建築で、暖簾をくぐり店内へ入ればノスタルジックな開放的空間が広がる。

まずはビールをお願いします。銘柄訪ねてサッポロをお願いしますっ…と、現れた好物の赤★。事前リサーチ済みだったが何とも嬉しい。練り味噌を口に含みながらチビリ…いや、ゴクりとビールで喉をならす。
■焼鳥(タレ) ¥850
甘辛たれ纏った ふっくらプリッとした鳥。此のタレはビールを一層旨くするスパイスのようだ。見た目のイイ照り具合からイメージするよりも、サラッとしている。丁寧に焼き目をつけた葱はすき焼きのようにも見える。辛子や七味を乗せていただくが上品な焼鳥に...旨。

石臼挽きぐるみ粉使用の外二並粉蕎麦。そのつなぎは卵を使用とのことだ。蕎麦の産地は時季により国内産を厳選している。運ばれたときに花番様から…
此処は薬味に山葵が付きません…
昔ながら七味唐辛子で味わってみてください…
と、説明を受ける(七味ーゆず七味ー山椒がテーブルに置かれている)。自身も、つけセイロ等を食すときには山椒を蕎麦に直がけすることもある。が、現代においても此のスタイルを推奨し続けているところに手繰る前から期待膨らむ。
見るからに輪郭ハッキリした蕎麦の繋がり◎。水洗い良く、水切り具合も絶妙。喉ごし良く、噛めばそのコシを楽しめる。蕎麦の香り風味はさほど感じないが仄かな甘みが感じられる。藪らしい蕎麦の印象を受けた。
汁は もちろん江戸前辛汁。しかし返しの丸みがいいのと甘みの余韻が残るのが印象的。鰹節の華やかさと旨味がバランスよく出ている。辛汁でありながらまとまりがいい。テンポ良く…ズルルっとイクゼ。
寒い日の19時ちょっと前入店。相席覚悟で入店したが70%くらいの客入り。しかしながら客の流れが途切れることはない。微妙に相席にならないような店内は居心地がよいため、粋な蕎麦食いとはならなかった…。もっと此処に留まりたい…。
