20197/17 7月というこの季節は心なしか美味しいモノを食べに行こう、そんな気にさせる時期。
そんな折、グルメ通の友人から紹介頂いたお店がこちら。予約して早速、伺う事に。
飯田橋駅から神楽坂を登って毘沙門天を通り過ぎた1本奥、通りから50mほど入った所にお店はあった。
地下に降りる、工事中というが、これに感じてあまり感じない。
前後に色々コースがあったが、8,000円のコースにした。内容は驚くほど、和食に拘りを感じるモノであった。
しじみと生姜のスープからスタート、箸付けとして4種盛り、坊ちゃん南瓜の素揚げは甘みの感じる美味しさ。
富士山鮭の酒盗和えは鮭の素揚げに酒盗和えた魚に魚というワザの逸品。
牛すじの煮込みはトロトロに煮込んだ牛すじが格別の味がした。生湯葉の刺身は出汁と山葵の饗宴である。
お造りは本マグロと真子鰈、鰹のタタキという組み合わせの難しさを彩りでカバーしている。
何気にしたのツマである若布が柔らかく美味しい。大根のツマに隠し味なのか茗荷が入る。
万願寺唐辛子の直火焼きは、焼くとより甘みの出る味わい。塩が少しかかり、そのままが美味しい。
冬瓜の銀餡掛け 鰻肝乗せはあっさりした冬瓜の煮方にアクセントの鰻の肝が乗る大胆な発想。これは驚きしかない。
鮎並(アイナメ)と蓮根の煮付けは、鮎並が、脂少なめの鰤に似ている。蓮根は味が染み込んでいる。
山形県産黒毛和牛の直火焼きは、和牛の奏でる脂の旨さを直火焼きでぎゅっと閉じ込めた絶品。塩と山葵で頂いた。
揚物は、鱧、アオリイカ、茄子、獅子唐と季節感ある揚物の構成。鱧は白身でも味わい深い。
アオリイカの食感も、さっくりと頂ける。獅子唐の青みのある味に口の中を変化させ、
茄子の熱々で天ぷらの旨さをより美味しく味わえた。
箸休めは芝海老の茶碗蒸し 雲丹は、滑らかな茶碗蒸しと芝海老という一手間掛けた逸品。雲丹がめちゃ美味い。
土鍋登場。釜揚げしらすの炊き込みご飯。釜揚げしらすの香り良く、茗荷も香り付けに入っている。
お漬物の盛り合わせも、茄子、胡瓜、たくあんとゴールデンコンビでご飯を盛り立てる。
浅利の味噌汁が磯の香りを更に煽る、料理長の狙いが見える。直球勝負だ。
橙(ゆず)のシャーベットでお口直し。パイナップル、さくらんぼでリフレッシュ。
ほうじ茶で締める。全てに計算された料理に、また訪問したくなる、そんな思いを抱かせる。
その料理に合わせて、ばくれん、乾坤一、亀齢、水芭蕉と純米酒、吟醸酒と4種を半合ずつ頂く。
どれも料理に合う素晴らしいラインナップ。お酒にハズレがない。
今回、入り口近くに12〜3人の宴会?個室で3〜4名と水曜日であるのにかなりの混雑から人気度も伺える。
カップル使用も、商談使用も、宴会使用まで色々幅広く使えると感じた。
