曙橋から四ツ谷に移転された原 正太郎さんが営まれる『はらまさ』さんにて。御案内状をいただいていたにも関わらずなかなかタイミング合わず。年内中には必ず顔を出しますから。と約束をしておりましたが気がつくともう師走、年の瀬の帰省の最大の目的は『はらまさ』さんへ御祝を兼ねて顔を出しに行くためと言っても決して過言ではありません。新店舗は白木造りの全八席のカウンター席の他に個室三室。ゆったりとした間隔を取り並べられたカウンター席の原さんが立たれる真正面の席に陣取り宴のはじまりです。呑みものも料理も全て店主の原さんにお任せして自分は供されたものを食べて呑むだけの超楽チンモード。呑み初めはメロンやバナナの香りが感じられるフルーティの呑み口の『越前岬』吟の雫 大吟醸から、料理は白菜の芯に『河豚(フグ)』ぶつを合わせる関西風の仕立てに『キャビア』と『唐墨(カラスミ)』をトッピングした先付から。最初から河豚にキャビアと唐墨とエンジン全開フルスロットルでのスタートでの『原 劇場』の開演です。凌ぎには『皮剥(カワハギ)』に皮剥の肝醤油(キモショウユ)を引いたにぎり寿司、コース料理の華であり料理人の腕の見せどころの椀物は『牡蠣真薯(カキシンジョウ)』の椀種に蕪(カブラ)のすり流し、椀妻には大黒しめじ、青みに芽蕪(メカブラ)、吸口に柚皮(ユズガワ)。向付には明石産の『真鯛(マダイ)』の腹身に『喜知次(キチジ)』の炙りに芽ねぎ、茗荷(ミョウガ)等のあしらい一式を割り醤油と特製の『あん肝醤油』を使い分け、あしらいは焼のりで包んで味わうのが『はらまさ』スタイルです。そして『はらまさ』さんの名を日本中に知らしめることとなった『元祖(ガンソ)痛風(ツウフウ)そうめん』は以前に比べて上品に尚且つ豪華にブラッシュアップされていました。その内容は『上海蟹(シャンハイガニ)』にアルバ産の『白トリュフ』の痛風素麺です。白トリュフの香りに茹であげて直ぐに剥かれた『上海蟹(シャンハイガニ)』の温かい混ぜ素麺はイタリアのパスタ バーミセリに相通じるものがありました。可能であれば、おかわりをしたかった程に後を引く味わいで下。今が旬の鳥取産の雌の『香箱(コウバコ)がに』に雄の『松葉(マツバ)がに』の夫婦がにの味比べ。『香箱(コウバコ)がに』には『海胆(ウニ)』をのせて焼香箱がにとして『松葉(マツバ)がに』は目の前で備長炭の焜炉焼にていただきました。焼物には霞ヶ浦産の天然の『黄金(オウゴン)うなぎ』を備長炭を使い『白焼(シラヤキ)』と『蒲焼(カバヤキ)』の『源平焼(ゲンペイヤキ)』に一尾にひとつしか無い苦袋付の『肝(キモ)』と『肝臓(カンゾウ)』付きのspécialité仕様にて。更には氷見産の『寒鰤(カンブリ)』をしゃぶしゃぶにて。胡麻油と柚子胡椒、柑橘ぽん酢での味比べ。締めの食事は『はらまさ』さんの代名詞でもある『トリュフごはん』です。今回はアルバ産のトリュフを使った豪華版です。この贅沢過ぎるごはんのお供には『河豚(フグ)の白子(シラコ)』に『松坂牛(マツザカウシ)』のサーロインに『海胆(ウニ)』に卵黄のお馴染みの痛風真っしぐらの食べ方にて。河豚の焼白子に入刃し更にその上からの追いトリュフの一杯はもはや筆舌に尽くし難き美味しさ。更には松坂牛のサーロインを軽くすき焼にして卵黄に海胆に追いトリュフは発狂寸前の美味しさ。トリュフごはんの残りは折詰にしていただきオミヤに。食後にはイチゴとマスカルポーネのデザートをいただき超尿酸チックな四時間余の口福な時間は過ぎ去って行ったのでありました。料理に合せて供された日本酒は入手困難な『墨廼江』のyamasaやまさ大吟醸雫酒、華やかな香りとまろやかかつキレの良い味わい『宮の松』の大吟醸、すっきりとした辛さとキリッと締った酸味からくる爽やかな呑み口の『麒麟山』純米酒グリーンラベルと料理の味に合せての原さんのペアリングを存分に愉しませていただきました。
