ランチタイムには税込1800円のお手頃定食もあるミシュランひとつ星店。
予約出来るのはコース料理のみ。僕は数日前に一番下の昼のコース「吉(=全8品、税サ抜き 6500円)」をお願いしておいた。
が、同席のおばちゃまが食欲旺盛。なのでもう1品増えるひとつ上のコース「福(=全9品、税サ抜き9000円)」に変更した。
どうやら基本は同じだが、「カラスミ蕎麦」と「トロの手巻き寿司」が福コースにつくと言う事なので、ちょっと魅力的。
飲み物はランチなのでお茶で進行。
まずは「先付」…ゆずを器にして、とてもビジュアルがキレイ。中には才巻海老、ふぐ白子が入る。とても美味しくレベル高いが、意外にもやや味は強め。
「揚げ物」が来た…『太刀魚、山菜はタラの芽、蕗の薹、蓮根もち』…太刀魚はしっとりほくほくのいい具合の火入れ、それぞれの苦味がある蕗の薹、タラの芽に春を感じる。
蓮根餅はもっちもち食感で美味い。
「自家製カラスミ蕎麦」…後半に出るのかと思ったら案外早めに蕎麦が出た。数口で食べ終わるくらいの少量。ペースが少し変わり面白い。
カラスミを蕎麦と混ぜ混ぜして絡ませて食べる。カラスミの味はやや強め。
「椀物」…中の具は蛤、筍、大根の千切り。明日は雛祭りだから旬の食材として蛤は嬉しい。筍も初物ではないが春を感じられて嬉しい。これもやや強めな味だが美味。
「お刺身」は「アオリイカ、ヒラメ、ヒラメの煮凝り」…お刺身に金粉が掛かっている。正月きぶんになりそう(笑)。
山葵醤油の他に、酢橘を搾って『酢橘塩』を皿の上にあらかじめ作っておいて、好みでいただく。
アオリイカもねっとり甘く、ヒラメもねっとりしている。山葵醤油でも酢橘塩、どちらで食べても美味しい。
「本鮪カマトロ、手巻き」…これも蕎麦と同様、福コースに出てくるメニュー。
これはかなり美味い。こっちのコースにして良かったと思わせる一品。
「焼物」は「ヤナギ鰈とその骨せんべい、菜の花にごまだれが添えられている」…カリカリパリパリの骨せんべいが特徴的で美味しい。鰈はしっとりと焼かれている。
「強肴」…強肴(しいざかな)は強いてもう一品出してくる料理。この日は真薯にエビあんかけのひと皿。とろみある海老のあんかけが特徴的。
「ご飯と止椀」…釜炊きした生海苔とホタテのご飯。生海苔の香りがたまらない。赤だし、お新香をいただき、日本人で良かった、と思う瞬間。
「わらび餅」や4種の水菓子の中から「黒糖のブランマンジェ」を選択。
バナナやイチゴ、ブルーベリーなどが上に乗る。ブランマンジェは上品な黒糖味そのもの。これも美味い。
全体的にもちろん味はとても美味しい。ただこれ以上いじると薄くなり過ぎるとか濃くなり過ぎるとかの繊細なバランスの出汁とは少し違って、ややしっかりとした味で強め。
お茶ももちろん美味しいから問題ないけど、少し課題はあるかな。ただ最後にご挨拶に来てくれた大将はまだまだ若く、これからが楽しみ。
店訪問前に電話があり、「カウンターには定食のお客様が多く、落ち着かないと思うので、個室になさいますか?」と連絡を下さったところからホスピタリティは良いと感じていた上に、食べきれなかった「ご飯」は当たり前のようにおむすびにして手土産にもしてくれた。サービス上々。
この値段でこの味が楽しめるのは結構嬉しい。
デート会食にも接待にも便利に使えると思う。
