「銀座おかもと」が 「おかもと」として今年1月神谷町に移転、独立。銀座のとき以来の再訪です。ランチは 12時 一斉スタート、お支払いは 現金のみ。
お店に15分も前に着きましたが、中で待たせていただけました。カウンター9席中3名着席。ほかの方々のレビューにもありましたが、焼く、揚げる、蒸すなど、その時の調理のほとんどが カウンターから見渡せ、炭の はぜるパチパチという音、蒸し物のシューッという蒸気の音等が聞こえ 熱量を感じ ライブ感たっぷりで 楽しい。お土産の ちりめん山椒の申し込みは2日前迄に。
なぜか今年は独立や移転、改装等で新たにオープンしたお店に10件近く行きました。
それにしてもこちらのお店の食べログの点数、低すぎませんか?銀座の時と全然違う。こちらの親方は幸村や和久傳の料理長だったのに…
蓮根と海老芋の胡麻あえ、炒りバチコのせ
サクサクのレンコン、粘りのあるエビ芋、とろりとした胡麻、パリパリの鉢子の食感の組み合わせが楽しい(^^)

少しずつ 焼いて 何回かに分けて お皿に のせていただきます。 ホクホクして 美味しい
通常 間人蟹を使うようですが、今年は
時化続きで (間人の船は小さく、時化の時は出られない ) 間人の蟹が 入らないため 浜崎という すぐ近くの漁港から出る 大きな船でとったもので 漁場は 間人の少し沖だそうです。

子持ち鮎って こんなにミニサイズもあるんですね。琵琶湖の子持ち鮎は小さいそうですが、その中でも特に選りすぐった?ミニサイズだそうです。
白味噌仕立て炊き合わせ
大根、お揚げ、グジにおかき衣をつけてあげたもの。「炊き合わせ」とは よく言ったもので 一種類ずつ 別々に 丁寧に炊いて 食べる直前に合わせ さらに別の鍋で作った出汁をかけます。
天然まいたけと栗の御飯
焼きバナナとヨーグルトのシャーベットに
カラメルをかけたデザート
目の前で、温められたカラメルが、シューという音 とともに 湯気をあげながら、シャーベットにかけられます。もって来ていただいたときには、カラメルが固まって ちょうど良い感じにパリパリサクサクの感触で楽しいです
黒豆を皮にまいて揚げたもの
シナモンパウダーが かけられています。
