土曜日の夜です。
麻布十番です。
およそ三か月ぶりの”鮨 詠心”さん。
前回、こちらのご常連様と訪れ、へぇ~っ、お若い親方なのに昭和の江戸前の仕事が出来るんだぁ、と感激。その場で今夜の予約をお願いしておりました。
予約時間の十分前に暖簾をくぐります。
最初の客です。
カウンターの真ん中に着席し、親方の中路氏にご挨拶。
『前回お越しいただいた際、貝が無いとお叱りをいただいておりましたので、今夜はとっておきをご用意しております』とまん丸な体躯の親方。
『エヘッ、それは楽しみっすね』と、ハイボールで唇を湿らしながら、コリンキーのお漬物を頬張るラッコ。
ほどなくラッコと同世代のご夫婦が一組、お若いご夫婦が二組お越しになり、七名の席で今夜のコースがスタート。
さてさてそれでは本題です。

<まとめ>
冒頭でご紹介したとっておきとは、大き目の蝦夷鮑でした。蒸し物ではなく、活を削ぎ切りにします。
水貝と言えば三原橋の二葉鮨が有名ですが、中路氏はちょっとひと手間加え、昆布出汁のクラッシュドアイスをトッピング。
いやぁ、これはウンマイ。それに嬉しい。だって少なくなりましたもん、このような仕事をしたツマミを出してくれるお店。
加えて、極大サイズのボタンエビ。ちゃんと頭も炭火で焼いてカリカリのおツマミに。酒飲みのハート鷲掴みですね、これは。
更に藤田水産の鮪。赤味も腹カミ一番も抜群に良かった。
『産地を教えてくれなかったんですぅ~』と親方。
『えっ、そなの?』
『そうなんですよぉ~、お客さんに聞かれるんで、とお願いしたら「やだ、教えてやんない、アハッ」って・・・』
『いいじゃないですか、藤田さんに可愛がられている証拠ですよ』
『だと良いんですけど・・・』と、真ん丸な体を折りたたむように縮める親方。
うむ、親方は稀代の人誑しかもしれません、と誑されてしまったラッコ。あっ、別に悪い意味では有りませんからね、どなたからも愛されるキャラ、ということです。
