地下の階段を降りるとそこには
雰囲気のあるドアと看板が。
オープンしたばかりのようで店内はとても綺麗。
カウンターのみの落ち着いた雰囲気。
この日はオープン記念の12月末までの
お試しコースをいただきました。
■先付
聖護院大根と海老真丈
すっとお箸が入る大根と海老たっぷりの真丈
お口に入れるとゆずがふわっと香って上品
■鰆の藁焼き
山葵とニンニクスライスをのせて
お塩とともに食べます。
そしてポン酢は最後野菜とともに。
藁焼きすることで瞬間燻製の如く
身に香りをまとった鰆
この鰆に脂がノリノリで甘いので
お塩と山葵をつけても全くまけてなくて
すべてがあわさって(゚д゚)ウマー

・やりいかと帆立
げんこうという柑橘のジュレとキャビアを載せて
めちゃくちゃ爽やかなジュレで
帆立とイカの甘みとキャビアが合わさって
バランス良い
・香箱蟹の茶碗蒸し
蟹がぎっしり入ってうまみたっぷり
・鰤レア焼き
トリュフと玉ねぎドレッシングにお塩パウダー
■年越しそば
通常だと手打ちのお蕎麦のようですが、
今回は連れのアレルギーに対応していただき
半田そうめんで。
具材は島根天然海苔、おあげさん、茄子、下仁田葱
この海苔と茄子が(゚д゚)ウマー
海苔は弾力があり噛むほどに海藻のうまみが
そして茄子は弾力がありながらも柔らかく
お出汁もしゆんであまーい
■山形庄内米土鍋ご飯
4つの食べ方で
・炊き上がる前
まさにお米のアルデンテ
・炊き上がりたて
蒸らす前のお米でお米が美味しいので
これはこれでおいしい
・蒸らしたお米
全然違う!!
お米に水分が入るとこれほどまでに
香りが立ち甘みが増すのかと実感できるもの。
・おこげ
土鍋にできたおこげを見せてくださいますが
とてもきれいなおこげ!
このおこげにお醤油を垂らして
おせんべいのようにいただきます。
■富田林の海老芋揚げと600g大鰻の蒲焼
大鰻はふっくらとしながら弾力があり
丁寧に焼かれています
海老芋は柔らかくねっとりとしていてほんのり甘い
■お漬物と赤だし
このお漬物かなり秀逸です。
牛蒡や人参は素材が生かされた味付け
そして白菜はみずみずしく上品
かつお節や昆布みそなど
どれも自家製ですべての味付けが上品で
ご飯ともよく合います。
■ちりめん山椒
実山椒と柔らかく上品に炊かれたちりめん
ピリッとしていて間違いのない味。
■甘味
・焼きプリン
昔ながらの硬めなものでほろ苦いカラメル
・わらびもち
自家製ならではふわふわぷりぷりの柔らかさと
上品な甘み
・フルーツ 白ワインのジュレとともに
いちご、洋梨、オレンジの自然の甘みを
決して邪魔することなくひきたてるジュレ

酒器がディスプレイされていて
ここから好みのものを選ぶというなんとも素敵な演出
いやーどのお料理も手間暇をかけて
丁寧に作りこまれていることが
よくわかる上質なお料理です。
六本木のにぎやかな喧噪から離れて
地下の落ち着いた空間、
そして気さくな店主との会話も楽しいです。
8席ですから貸し切りもできるとのこと。
美味しかった。
