4ヶ月ぶりの訪問。さて今日はどんな食材とネタと出会えるか楽しみに伺いました。L字カウンター8席の角に座り、ペールエールを注文しスタートを待ちます。
登場したビールはのっけから拘りの和歌山、平和酒造の『平和クラフトペールエール』地元和歌山愛が素晴らしいですね^^

ごっそりと厚切りされた蝦夷鮑、そしてその鮑から取った出汁に浮かぶムラサキ雲丹。繊細な味わいで美味しい。
軽く藁蒸しされた、めじ鮪の後は鯖の龍皮巻き。
味噌漬けにして軽く炙った半生の唐墨は最高に旨い!
新酒の『凱陣うすにごり』が進みます♫
定番の炭焼き牡丹海老には和歌山の三つ星醤油で味付け。濃口の味わいがいいですね♫

ネタに拘り、地元和歌山に拘る大将が繰り出す繊細なお皿の数々。
特に透き通った出汁が味わい深く、身体に染み渡る旨さですね♫
又お酒もレアで旨いものが揃っていてそれも嬉しい事です。
