一般的に関東では甘醤油の汁でカツや玉葱を煮て溶き卵で綴じたモノがカツ丼であるが
玉子で綴じないカツ丼、所謂カツだけを汁で煮たカツ丼が存在するのをご存じだろうか?
関東から北の地域に多くは見られるが関西方面にはデミグラスソースを掛けたカツ丼などもある様だ。
信越・北陸方面ならば福井県や長野県の玉子無しカツ丼が有名であるが丼(どんぶり)の
基礎たる米の名産地・新潟県にも「玉子無しカツ丼」の文化があったようだ。
そのことを知ったのはこちらで新潟タレカツ丼を食べたからだ。
趣味でバイクに乗り、福島、埼玉、長野の各土地土地で玉子無しカツ丼を食べて来たが此方の
新潟式(玉子無し)カツ丼が一番洗練されているように思われる。
カツの厚み、大きさ共に丁度食べ易く、味付けも諄さを感じないあっさり目な味で最後まで飽きずに
食べられた。卓上に常備菜としてガリ(酢漬けのスライス生姜)が用意されていたがこれが
箸休めに何とも合う事か!新潟ゆえコメの旨いのは言うまでもないが丼(どんぶり)用にと
固めに炊かれているのも旨いと思う重要な要因だ。
後日、新潟在住の某氏に尋ねたところ、やはり旨いと言う。
ならば是非とも現地で食べたい!
新潟に数ある地ラーメンを食べ歩くことは未だ宿題となったままであるが、それにもう一つ
宿題が加わったようだ。
