銀座一丁目のさらに端っこに位置するビルの奥まったところに入り口へ続く階段があり、ひっそりとのれんを掲げているだけなので、うっかりすると見逃します。ナビで調べながら行ったけれど、それでも一度、見逃しました。
平日の夕方にようやくたどり着いたお店は、玄関のイメージよりも明るくて接客ぶりも含めて温かな感じがします。ほっこりする。カウンターではなく、個室を使わせていただいたので写真はOKでした。
13000円のコースの先付けは蟹と姫きゅうり、しゃきしゃきした食感のそうめんカボチャ。蟹味噌の香りを含んだ出汁にきゅんとしました。
次は、からすみを巻いたキスとヤングコーンの揚げ物。からすみって食材の旨みを倍増させますね。最近は何にでもトリュフを合わせるのが流行っているけれど、からすみは和風のトリュフのように主役を食ってしまうような力を持った脇役だと思います。
身がほっくりした甘鯛と加茂茄子の椀。お造りは皮を炙ったタチウオや、はもこの塩からを載せたヤリイカ。焼き物はマナガツオにゴボウのソース。蒸しあわびと、じっくりと空焼きした枝豆を添えてあります。枝豆の空焼きって味が濃くなって、いいつまみになりますね。
肉は鴨。ツルムラサキと梅肉ソースで。鱧と冬瓜の椀の次に、しめのご飯。金目鯛と水菜の炊き込みです。色も美しい。デザートはイチジクと和三盆のヨーグルト。
3人で瓶ビール、京都の澤やまつもとや栃木の鳳凰美田など日本酒(1合1200円~)も8合ほど飲んで、一人当たり約18000円。
ステキなお店で、またお邪魔したいと思いました。
