日本橋 天然物の穴子。ひとつ路地を入った処に歴史の風情を今に遺す佇まいに藍の半暖簾。

この箱ですと、煮穴子、焼穴子白醤油仕立て、穴子のなめろう、刻み穴子の四種が楽しめる幸せなお膳(^^)
箱めしの中箱・大箱とめそ箱めしは、煮上げ一枚と焼上げ一枚を"合いのせ"もお願いできるようですね。
折角の良いタイミングなので、ここは四種が楽しめる、お刺身御膳をお願いします!
ゆったりと深呼吸。。卓上には瓢箪粉山椒。。
「お出汁でお茶漬けにするなら刻みと煮穴子が合いますよ」と有り難いご案内。善きところで穴子出汁をお願いしようと思う。
まずは焼穴子白醤油仕立てからひと口。。
穏やかな穴子。醤油はほんのり品良く。大葉薫るご飯によく合う。
そして、穴子のなめろうを。。
おおぉ。ぽってり穴子。これはお酒のお摘みにも。
で刻み穴子も。。
確かにお茶漬けに合うな。醤油香ばしく甘めの焼穴子。ちょっと取っとこう(≧∀≦)
で煮穴子を。。
これですね。これ。穴子がしっとり。これも穴子の旨さが前に出る煮付け。絶妙だ。でもお茶漬け向けに取っとかないと(๑>◡<๑)
ここで穴子出汁¥200をお願いします。鉄瓶で熱々の穴子出汁登場!
まずは刻み穴子に白胡麻と山葵。そして穴子出汁。
そして煮穴子に白葱 白胡麻 山葵への穴子出汁。。
いいわぁーどちらも。
最後に穴子出汁へ柚子と白醤油をパラっと一杯で〆。
もちろんお刺身も手抜きなし!!
白菜と胡瓜のお新香でごちそうさまでした!
