これら最高の材料を日本における四川料理の第一人者である趙楊氏のこれまた高度な調理技術で戴いた。
先ずは圧巻の十六種類の前菜から。

趙シェフは来日したばかりの頃、八王子で店を開いていたことがあって
そちらにお邪魔したことがある。それ以来だから数十年ぶりの訪店。
料理全般にさすが!元全牛賓館総料理長と思わせる一品ばかり。
安易なヌーベルシノワが持て囃される今日この頃、オーソドックスながら
中国料理の奥深さを見せつけられた感じだ。
交詢社時代は未訪問なので詳しくは判らないが
ここに店を構えたことによってコンパクト且つ機能的になって
使いでの良い店になったのではなかろうか?
ご子息、お嬢さんのサーブも心地よく、家庭的な雰囲気が感じられた。
この日はかなり贅沢をしてしまったが予算に合わせての料理もOKとのこと。
中華料理とは?を問いたいと思ったら是非こちらの店に。
