先月ひとりで行って気に入ったので、今日は家内を連れて行きました。午後2時のカウンター席を予約。少し遅い昼食です。
お願いしたのは握りの15貫です。
最初に冷製の茶碗蒸し。玉子のうえにクリーム状の大葉。そして甘海老。なかなか美味しいです。
握りは小鮎、こち、のどぐろ炙り、いわし、琵琶ます、づけ、中とろ、こはだ、あじ、北寄貝、かつお、毛蟹、さば、穴子、馬糞うに、玉子。お好みで赤いかを追加しました。
どれもご主人が吟味した渾身のにぎり。全て美味しいです。
強いて自分の好みを3つ挙げておきます。
小鮎の新子仕立て。この季節だけの魚です。酢で締めてありますが、繊細な味でした。琵琶湖を擁する長浜らしい寿司だと思います。
毛蟹は北海道産。にぎる直前に殻から身を取り出すので、香りがとても豊かです。
さば。これも新子仕立て。独特のスタイルなので、さばの旨味がより繊細に感じられます。
最後にデザート。抹茶のブラマンジェをいただきました。
ご主人はとても研究熱心です。宮津から独特な酢を仕入れたり、焼津の有名な魚屋と取引を始めたり、新しい取り組みをされてます。これからも進化は続くと期待できます。
家内にも大好評でした。また来ます。
