まったく情報をみないで行ったのですが
後から知ったのですが
東村山の土家さんと同じ修行先だったみたいで
粗挽きそば
土家さんと、粗挽きへの考え?
指向性が似てる感じがしましたっ?
似てるなって思っただけで
確かなことは言えませんが〜
口にふくんだ時の第一印象
感覚がなんだか
似てる気がしたのです

淡い、mellowな世界感
繊細なきめ細かい色味のundulation粗挽きで
口にした瞬間よりも即ジワっと舌の上で
蕎麦の香り、
甘みと、殻のほろ苦みが現れます
何もつけない、で食べるか
塩(天麩羅についてた塩でいただきましたが、
塩を頼むと持ってきてくれます)
で食べると
その、繊細な粗挽きの中から溢れてくる
蕎麦の香りと甘みが解ると思います
もちろん、かえし、も美味しいです
かえしは、ちょっと濃いめな気がしましたので
本当、ちょこっとつける程度がよろしいかと思います

鰊の旨煮はお蕎麦がくる前
ファーストでいただきました
鰊がある程度、食べ終わる頃合いで
天麩羅の盛り合わせ、せいろがきました
なので
ゆっくり
鰊を食べれました
優しい鰊です
とにかく
優しい鰊な感じ
かなり、柔らかく煮えてます
かなり、弱い火で、ゆっくり、じっくり
沸騰の泡も弱な感じで ジブジブと
焚いたのではないでしょうか?
で、味付けはかなり、薄味です
甘さも、かなり、控え目です
もし、味が濃かったら
甘さを感じないでしょう
脂の乗った鰊
腹側よりも背側の方が
何故か好きでした
アクを抜いただけにしてあるような
香りの良い煮山椒と
胡椒でいただくのですが
これが美味しい〜
人肌の日本酒等が合いそうな鰊です
酒の肴に向いており
お蕎麦とは合わない鰊だと
思いました
優しさの中に何か
ズルさや強さもあったらいいのにな
って感じ?
多分、山椒と胡椒で
強さを少し出してるのかも知れないけど

天麩羅屋さんよりも美味しいと思いました
