2018年こそは「マシライスが食べたい」。1月3日は川越市の喜多院 初大師だる市で大渋滞が予想され、翌日の4日にタチマシ8号店へ。2015年12月16日に、立川マシマシ公式アカウント@TachikawaMashi2でマシライスのレシピを公表するとツイートがあり、あれから2年。そもそも公表しようと思った動機は、全国のフォロワーから「食べたい!」という声が多く、そのたびに出店を繰り返すと時間も資金もかかってしまう、なによりも「食べたい!」に応えるためにはレシピを公開して各地の同業の方々にご協力頂いた方がスピードが速いと考え、今回のレシピ公開に至ったとの事。その同業者用レシピをこの機会におさらい♪
【材料】およそ16人前
•豚挽肉 2kg
•ごま油 約150cc
•刻みにんにく 約50g
•タカノツメ 約50g
•醤油 800cc
•ハイミー 50g
•砂糖 250g
•豚マシ用チャーシューでできた背脂
•ごはん ※魚沼産コシヒカリを使用
【作り方】
①挽肉のみを鍋で炒める。その際、挽肉がダマを作らない様に木べらで潰しながら炒める。必要以上に脂が出てくるのでご注意を。
②約10分炒めた後、挽肉の脂をザルできり、再度、鍋に移した挽肉に、ごま油をひき、刻みにんにく、タカノツメ、ハイミー、砂糖、醤油を入れ、ひと煮立ちさせて完成。
③皿に盛る。※盛り方は画像参照
と、こんな感じだった。第一印象はうまい!うまい!うまい!でした。甘辛の豚挽き肉はコシヒカリ、卵黄との相性も良く、サラサラと食べすすめ、癖になる事間違いなと思われ、今後も機会を見つけてマシります。
