お誘いいただき訪問しました。麻布十番からこちらに移転されて、一年少し経ったそうで、この日も麻布時代からのご常連がいらっしゃいました。
すっきりとした店内、カウンターに飾られた青々とした松の盆栽が目を惹きます。
大将がお若いことに驚きました。こちら、藤田の鮪に拘られているという。「藤田の鮪を使う店が増えてきて、嬉しいような困るような」と笑われていました。
いただいたお寿司はコース(33000円)、少量ずつワインのペアリングを。
◆は握りです。
◇蛤の吸い物
濃い蛤のお出汁でまずはお腹を温めます。
◆中トロ
ご挨拶がわりに。蕩けます。甘い。
◇もずく酢(淡路)
シャキシャキの食感。
◇鰹(勝浦)
皮目を炙って。新玉葱ソースで。甘くて酸味のあるワインが合います。
◇桜海老(静岡)
桜海老の素揚げを手巻きで。初めての仕立て。香ばしい。桜海老には白よりロゼを。
◇鯛(明石)
白子の擦り流し和え。弾力ある身に濃厚な白子を纏わせ。スイスの白ワインを合わせます。軽やか。
◇煮蛸
柔らか煮。「おでん風風」と大将が笑う。辛子を添え青柚子を振って。
アルザスの甘口ワインを合わせて。
◆平目(青森)
脱水平目。昆布の香りが入らないよう、敢えて昆布締めにはされないそう。
デンマークのりんごワイン。これは珍しい。
◆白いか
塩で。やわやわに柔らかく。
◆赤身
繊細な旨みを湛えています。
ジュラ地方の赤を。
◆海老(大分)
大きい。1本のままの方が美味しいとのこと、カットせずに出していただきます。濃厚な甘さ。
甲殻類には南仏、ということでプロバンスのロゼを。
◆中トロ
腹中。ほぼ大トロ、シルキーです。
贅沢感とすっきり感を味わうためにシャンパーニュを。
◆雲丹
雲丹にワインを合わせるのは難しいと思いますが。南アフリカの、生臭くならない白ワインを。
◆大トロ
繊細です。きめ細やか。
合うカリフォルニアの白。濃厚なバター感、ナッツ感がよく合います。
◆穴子(対馬)
ふわふわ、蕩けます。
山椒に合わせてイタリアワインを。スパイシーな香りが素晴らしい。
◇とろかん
トロと干瓢巻き。初めてのお味。意外に合う。
◇しじみの味噌汁
◇玉1
2種出ます。最初はプリンタイプ。
ナポレオンが死ぬまで愛した甘口ワイン。南アフリカ。
◇玉2
カステラタイプ。芝海老、玉子、砂糖のみで。芝海老がふんわりと香ります。
大将もブレンドリーで、どの客に対しても目配りが効いていて、満遍なく話しかけてくださいます。
最近、お寿司屋さんでペアリングをなさるお店が増えていますが、過去一楽しかったです。立憲民主党の安曇氏に似た風貌のソムリエ氏が、お寿司に合わせてさながら世界旅行をさせてくれるような。
楽しい時間を過ごす事が出来ました。
