2018.6.6昼、天寿し 京町店にて昼席。
ずっと念願だったが、行ってみて益々惚れてしまった。
煮切りをほとんど使わず、かぼすと塩でタネの良さを引き出すスタイルは、全てに必然性を見出せるほどの説得力。
どれも奇を衒ってないのに、実に独創的。
タネとシャリ、本来極めてシンプルな組み合わせである鮨1貫の中に、まるで1皿の料理のような食材の組み合わせは、柔軟にして質実な設計思想があるからこそ。
わざわざ小倉まで行く価値、あり過ぎるほどありまくり。

◆平目(冗談抜きに、美味過ぎて涙ぐんでしまった)

◆太刀魚(口中で拡散して儚く消える極楽的に柔らかな旨み)
