温かい蕎麦と冷たい蕎麦がありますが、今回は冷たい蕎麦から「鴨汁ざる」を注文しました。冷たいざるそばを温かい鴨汁につけて頂きます。
蕎麦は細くてしっかり蕎麦の香りがします。うどんはしっかり捏ねればグルテンが形成されてコシが出ますが、蕎麦の場合はグルテンが出ないので細く伸ばすのはとても高度な技術が必要。こちらの蕎麦は不自然な固さが無いのでおそらくつなぎをほとんど使っていないのだと思いますが、それでもこれだけ細く打てるのはさすがですね。
鴨汁は濃厚な鴨の出汁が効いています。具材は鴨肉やネギ。やはり昔から鴨にはネギなんでしょうね。ネギは焼いてから入れてあるので甘味が増しています。
この鴨汁に蕎麦をつけて頂きます。鴨の旨味と蕎麦の香りが最高のコンビネーション!冷たい蕎麦と温かい鴨汁の対比も美味しさを引き立てています。薬味としてネギとワサビが添えられていますが、お好みで加えるとこちらも良いアクセントに。
蕎麦湯で鴨汁を割って最後の最後まで頂きます。お蕎麦が本格的なのはもちろんですが、鴨汁もまるで高級和食店で頂くような美味しさ。
今回はお酒が飲めませんでしたが、今度はぜひ日本酒と一緒に味わいたいと思います。
