▷奥神楽エリアにある隠れ家立地のお野菜中心の和食屋さん
OPEN時(R6.3.1)に有名店(フロリレージュ、初音鮨さん等)からお花が届いていて気になりすぎてオープン直後にランチで訪問したお店、半年ぶり以上に訪問、今回はディナー利用

今日は、デリクエンテの変顔ワインシリーズ
▷お料理は野菜が中心のお任せ料理
こだわりのお野菜、そのお野菜の素材の美味しさをそのまま味わうお料理
軽く塩や味噌の味付け、出汁で煮たり、焼いたりと調理もかなりシンプルなお野菜中心のお料理ながら、飽きのこない美味しさ
お野菜も珍しい銘柄多いですし、お野菜のお味が基本甘味あってあおくささはなく、お野菜自体がかなり美味しい
▷ランチはこだわり食材のちょっとええランチって価格帯ですけど、夜はこだわりそのまま、かなりお手頃、、、というより割安
個人的にはランチより、夜のがオススメ

⭐︎ちぢみ小松菜のお浸し
⭐︎もものすけ蕪、あやめ雪蕪、大根(銘柄忘れ)
生の蕪と大根切っただけ、全て甘みがあって、みずみずしいお野菜、塩と自家製合わせ味噌につけて
⭐︎煮た鮑と山形の豆
出汁で煮た鮑と豆、鮑は柔らかく、豆は逆に固さの残った食感の炊き合わせ、軽く山椒かけて
⭐︎山形のさくらんぼ鶏とからとり芋
さくらんぼ果汁で育ったさくらんぼ鶏焼いたのと、里芋の一種のからとり芋を出汁で煮たのをあわせたお料理
⭐︎生牡蠣、カキえもん
⭐︎かますのカルパッチョ
軽く炙ったカマスとキャロットラペ
⭐︎バターなっつかぼちゃと蓮根焼
ゆっくり時間かけて焼いて、軽い塩味だけで味わうお野菜、バターなっつかぼちゃは甘さひきたつねっとり食感、逆に蓮根はしゃきっとした食感
⭐︎釜炊ご飯と香物とお味噌汁とごはんのお供
この日はご飯のお供をえらばせていただきまして、遊豚のハンバーグ、村上の塩引き鮭、金目鯛の頭の煮付けから金目鯛オーダー
金目鯛には、モロヘイヤとからとり芋つけあわせ
香物は胡瓜、藤沢蕪、菊芋の浅漬け
本日のお米はつや姫、つやつや白米
土鍋で炊き立ての白米(一合炊き、一合までおかわり可能)
