約1ヶ月ぶりの訪問、最近はインスタで新しいメニューのアナウンスを見て訪問したりしていましたが、今回はそういうわけではなく、以前からシェフにスペシャリテを食べて欲しいと言われていたので、これを目的とした訪問です。料理3品とワイン3杯で1万円弱の会計となりました。
まずは「人参ムース・自家製コンソメ・ウニ」、雲丹は自己主張の強い食材ではありますが、濃厚なコンソメとも喧嘩せず、人参ムースがこれらを包み込んで全体としては爽やかにいただけました。
そして最近の新しいメニューでインスタにも上げられていた「エイヒレのムニエル焦がしバターソース」、これが前菜なのかと驚くほどの堂々たるお皿です。身はボリュームがあるだけでなく透明感あふれる素晴らしいものでして、軟骨もポリポリといただける仕上げでした。さらに素晴らしいのは焦がしバターソースという表現にはおさまりきらない酸味のある工夫の感じられる重たくないソース、最高に美味しい一皿となりました。
そして満を持していただいた「ブーダンブラン(鶏肉のソーセージ)キノコのクリームソース」がシェフのスペシャリテです。これほどスペシャリテという表現が適切と思われるお皿ってあるのでしょうか。今回はエイヒレのお皿をいただいて、これを一押しとして口コミを書こうと思ったものの、さらに上をいく美味しさでした。ソーセージ自体が肉々しいながらも柔らかい食感で飽きずにいただけるのに加え、ソースがとても素晴らしいのです。キノコが和食の出汁や中華料理の乾物の味わいに匹敵する奥深さを与えてくれると感じました。オーソドックスな料理ではありますが、その堂々たるオーソドックスさが感動的な印象です。引き続き通いたい、という思いをより一層強く持ちました。
