今夜は以前から行きたいと思っていたお店に食事会で使わせていただきました
又こちらは一元さんお断りなので仲良しの有名ブロガーさんに無理を言って紹介して頂きました
後から知った事ですが今夜の「豚匠あやり」さんは以前お世話になった天ぷら吉祥さんの姉妹店、ご縁を感じます
店名の亢谷利あやりとは上がる高ぶるなど飛躍の意味合いを込めて付けられたそうです
カウンター12席からなるこじんまりとしたお店、
こちらも住宅街に潜む隠れ家です
奥へと伸びるカウンターはイチョウの一枚板
毎日牛乳を使い磨き上げる事で滑らかな光沢と色白の発色が生まれるのだそう、なるほどこの艶、触るとしっとりとした感触はそういうわけか…
金に塗られた壁を背にした真っ白な白衣の調理人の几帳面に合わせた襟元と向かい合うと急に背筋が伸びてきます
今夜のお料理が益々楽しみになって来ました
カウンター席に着いたら先ずはビールで乾杯
¥6500のコースの幕開けです
出された先付けは朱色の漆塗りの盆に並べられた7つの九谷焼き
これは私が最も好きな色絵磁器、偶然ながら不意の出逢いに嬉しくなる
上に乗ったお料理はどれも食感豊かで新鮮な食材が使われているのが分かる
ハツはごま油で和えて刻んだネギの香り付が香ばしく、ミミガーともやしのコリコリとした食感は軽やか
バリエーション豊かでこれだけでお酒が飲めてしまう先付けでした

たっぷりの香菜と戴くモチモチの豚足、美しい穂紫蘇はエディブルフラワーのように華やかさを添え
これが豚の部位とは想像もつかない料理となって鎮座している
メニューにはスタンダードな串も織り交ぜられ 部位にあった調理法でひと串づつ丁寧に出される
その間に江戸切子のグラスの芋焼酎の水割りをお代わり
ひと口飲んでは口の中の油分を流しゆっくりとクセの強さを愉しむ
上ロースは瞬間スモークで蓋をされたまま出され、砂時計が落ちるのを焼酎片手に焦ったく待つ
実はこんな時間も楽しさの1つで 客のタイミングを敢えて外すイレギュラーさが心憎い
砂が落ち切った煙の残る蓋を外すと桜チップの香りを纏った上ロースの甘みが口いっぱいに広がり噛み締めるように味わうと豊潤なる香りの余韻が残る

しかも紹介制という付加価値も付いてくる
ドクター2人も大満足のご様子、大物芸能人も足繁く通う理由が分かった気がします
豚尽くしということを忘れてしまうアレンジでよく研究されているなとつくづく料理に対する情熱というものの大切さを教えて頂いた夜となりました
