鰻は福岡より。さくさくとふわふわの食感を二重に重ねる妙。昆布と八角のお塩。インスピレーションを感じます。
秋ですので松茸。岩手より。餡掛けはほっとする優しさを感じます。
煮麺は思わず無心になります。
お造りは鮃。綺麗な縁側でした。ジュレと余市の鮟肝の調和。
鮑にはじゃがいもと百合根。トリュフが全体を支配し、割って溶け出す鶉の卵がディテールに変化を添えます。
土鍋ご飯は穴子に深みの効いた山椒。
ほどよい前衛的調和。
