和食でも、イタリアンでも、フレンチでもない、「長谷川稔」というジャンルの料理を提供するレストラン。
時間と手間をかけ丁寧に作られるお料理は、とてつもない美味しさ。
又、サービスも好感が持てるので居心地の良い素敵な時間を過ごす事ができます。
== 10月のコース ==
◆【鮑 ズッキーニ】
鮑 (京都舞鶴産) を昆布締め → 酒蒸し → 硬水を軟水で割った水でお掃除 →水と塩のみで約3時間火入れ。
ソースは鮑エキスをくず粉でとろみを出して。
ズッキーニのロースト添え。
◆【白カジキ ブレザオラ(牛肉の生ハム)】
お魚コンシェルジュ「長谷川大樹」さんの白カジキ。
生と炭火で炙ったもの2種類。
その上に神戸ビーフのブレザオラを乗せて。
添えられているのは北海道産のハーブと福島県産の茄子のマリネ。
◆【鹿カツサンド】
北海道の蝦夷鹿のもも肉を燻製しカツレツ仕立てに。
じゃがいものグラタン、タルタルソース、とんかつソース、キャベツ、トマトをトーストで挟んで。
インカのめざめのロースト添え。
◆【キャビア ウニ パスタ】
愛媛県の神経締めをしたハモと、銚子の蛤の出汁に酢橘果汁を加えたソース。
上に北海道昆布森のバフンウニをトッピング。
◆【金目鯛 松茸 キャビア】
稲取の金目鯛を前日に昆布締め、塩打ちして脱水。
30秒スチーム→30秒休ませて→1分スチーム→1分休ませてという作業を約1時間も繰りしてゆっくりと保湿させながら火入れしているのでふっくらした身。
鱗を焼くのにも火が入り過ぎないよう氷を当てながら焼き、仕上げに余分な油を落とす為炭火で焼くという手前も時間もかけた分秀逸な美味しさ。
松茸、ベルーガキャビアを添え。
◆【豚 牡蠣】
北海道厚岸の牡蠣は酒蒸しにしてから鰹の出汁を吸わせ、松坂豚のロースと梅山豚のバラ肉は炭火で焼いて。
牡蠣と豚肉を一緒に食べる事で、お互いが持つアミノ酸の相乗効果により美味しさが増すとの事。
兵庫竹岡農園の玉ねぎをトッピング。
◆【うなぎのリゾット】
福岡産の海うなぎは軽く蒸した後、炭火焼き。
福井県いちほまれ米を蛤の出汁と山椒を入れ炊き上げ、酢と卵黄を絡めてリゾットに。
佐賀のはしり(海苔)、揚げ玉、山葵、茗荷ピクルス添え。
◆【トマト チーズ】
北海道余市トマト、木更津のモッツアレラチーズ、ネロパルマ(2年熟成させたイタリアの生ハム)の組み合わせ。
◆【赤牛 マルサラソース】
高知県赤牛のヒレを2〜3時間かけ火入れをし、仕上げにさっと炭火で炙って。
賀茂茄子のグラタンとポルチーニのローストを添え。
◆【デザート】
①福島県の桜桃
果肉、ソース、凍らした実でかき氷仕立てに。
②ティラミス
ピスタチオのアイスクリーム、黒いちじく・ガトーショコラ・マスカルポーネ・ラム・メレンゲ。
