23時頃閉店して、午前1時まで店内の掃除。
店内ピッカピカです!
午前5時過ぎには埼玉県川口市から築地へ。
毎日、往復4時間の仕入れ!
自分できちんと見た魚でないととの事です。
自分のペースで買うのではなく、
魚のペースで買うのだそう。
夏は良い魚があるそうです。
半年はヒマで大変だったそうですが、
それでも攻め続け、クチコミでどんどん広がったそうです。
パッと見、怖いのかなと思いましたが(笑)
一生懸命で真面目で、笑顔が可愛い店主。
