太刀魚
皮の脂を感じられるようにあえて皮を裏返してのせてるそうです。確かに皮と身の間の脂を先に感じられます。
マグロのタルタル 山葵ソース
アボカド、たくあん等が混ざっていて
山葵ソースがそこまで主張してなくて
みんなをまとめてる感じ。
たくあんの食感と塩気がいい一品。

無数に入った切込みが綺麗、食べたらお米とすぐ馴染む。

写真観ればまた食べたくなる美味しさ
トロはお米との交じりが速くてすぐ食べてもた。

キュッとした身は海老の旨味が強い。

上にかけられたあんとトマトの酸味がいい。

何気にさっきから雲丹まぁまぁいただいてますが
握りでもいただきます。
あ、お米との交じり合いNo. 1は雲丹でした。

こちらも初めて食べました。
ピクルス的な箸休めなんかと思いきや
酸味もまろやかで優しい味のカリフラワーと
シャキッと食感のミョウガは最高の箸休め。
玉子
見た目がプリンみたいな玉子。
食べても舌触りがプリンとか茶碗蒸しみたい
こんな玉子あるんだと知りました。
うなぎの蒸し寿司
箸を入れたら湯気がほわ〜っとシズル感半端ないです。
うなぎのふわっとした身と
蒸されてほんわかしたお米。
米に身山椒などが混ぜられてて
アクセントになって美味しい。
鱧にゅうめん
ボンとのった鱧と素麺も美味しいけど出汁がまた美味しい。
デザートは
西瓜のゼリー寄せ アングレーズソース
アングレーズソースはカスタードソースみたいと
教えて貰いました。
で、出て来たらトマト??って思いました。
見た目がトマトに見えて。
これまた凄い面白いって思ったデザート。
コース料理は自分で頼まない物を
食べてこんな料理があるんだ〜と
発見出来るのが楽しい、改めてそう感じました。
