大分県 佐伯市にある NARUMIさんに、行ってきました。
大分の寿司の中でも、“佐伯寿司”というジャンルを確立した佐伯市の中で、
熟成にこだわったお鮨を提供するのが、NARUMIさんです。
お店は、国道217号線沿いにあり、
和モダンな店内は、1階がカウンター5席、
2階は、子供がいるファミリーでもゆっくり食事ができる、
オシャレな座敷になっています。
今回は、3か月振りの訪問だったのですが、
ちょうど、お店の1周年記念の日!
店主のさだちゃんとも、「運命感じるね~」と
笑いながら、楽しくスタートしました。
内容は、5000円のおまかせです。

摘みの魚は、フレッシュな物を使い、
握りは熟成や〆、漬けなど、
仕事をしたお鮨を頂くことができます。
お父さんが揚げる天麩羅も美味しいし、
親子2世代で営む、お店の雰囲気も最高です!
今後は、酢飯の方向性が確立されれば、
大分を代表するお店になるでしょう。
ぜひ、福岡などで、見聞を広め、
お店の進化に役立ててほしいと思います。
