椎葉村ワカサギ バターソテー
昔のワカサギはもうふた回り大きかったそう。急速冷凍されその後解凍し常温の状態では鮎のような香り。とても貴重なものをいただいた。
宮崎牛 雌32ヶ月 しんしん ステーキフリット
これぞ本物の赤身。巷で人気のドライエージングも悪くないけど、やっぱり仕上がっている黒毛和牛のしんたまなどの赤身部位には敵わない。旨味の濃さが全く違う。また個人的にはサシの少ない部位は、低温調理よりもステーキフリットでの調理の方が旨いと思う。素晴らしいステーキでした。
刀根鶏チキン南蛮
綾豚肩ロースとんかつ
綾豚熟成2週間。やはり肩ロースは味が濃くて旨い。白豚系の味の方向性だが味が濃く、脂が口当たりやわらかく甘い。
宮崎牛ハラミ
質感がよく、やわらかいけど弾力があるのが良い肉。素晴らしい。
小倉牛 雌 31ヶ月 ヒレ
味の濃さは十分。宮崎牛のピンの甘さはなかった。
