呑兵衛を自称する庄司親方の見立ては素晴らしい限り!
握りとつまみが交互に織りなす、極上空間!
まさに、杜の都、酒呑みワンダーランドである。
まずは、○軽く炙ったホタルイカ。下には軽く盛った、酢飯と海苔を忍ばせる。
日高見をチビリチビリ、口中で旨味を転がしながら、ルイロデレールでピシッと切る。
○白魚、○裏漉ししたあん肝と平目、○鯛のアラの煮凝り
○海鼠酢、○タコ とつまみが続き、日高見がさらに進む!
親方は、酒呑みの気持ちをよーく分かってて、酒の種類、飲むペースに合わせて、ここにこれがくれば! というつまみが絶妙なタイミングで出してくる。
回りを見渡すと、お任せにありながら、客に出すネタ、タイミングが全部違う。
一斉スタートなんぞという無粋な、店のご都合主義とは無縁! 粋だねー!

ここで○閖上の赤貝にぎり、
続いて、○ヒモは海苔に乗せて、
○肝は甘辛く炊いて、 つまみが続き、日高見をぬる燗にして、まったりと。 そしてまた、シャンパンで切る。
つまみだけだと飽きがくるし、日本酒だけだと、甘ったるい。
そこにシャリを織り交ぜ、シャンパンで切れば、どこまでも飲み続けられそうだ!
