初訪 201910(No.1497)
京都のお寿司と言えば、何といってもいづうさんのような鯖の棒寿司や
押し寿司を思い浮かべる方も多いかとは思われます。
勿論、普通の握り寿司のお店(白身魚が中心で鮮度が売り物)も有りますし、
最近では子供だまし的?(写真映えのみ?)ではありますが、
AWOMBや祇をん 豆寅 祇園店などが人気ですね(>_<)
そんな京都に京都好きが高じて、東京(西新宿)のお店を畳んでまで2017年4月に
祇園でオープンしたお店ながら、2019年ミシュランガイドブック京都
(発売は2018年11月)で☆と言うお店であります(驚
訪店時に大将(森田 忠保氏)に伺った処では2020年度版の
授賞式にも行かれたとの事で、ミシュランガイド京都☆、2年連続決定だそうです(祝
今回の京都旅行の当初の計画では冬の京都の名物である『蒸し寿司』を
頂くべく河原町の乙羽さん辺りを考えていたのですが、
直前(2週間前)にこちらのお店の情報をゲットで、
お寿司好きのマイレビ様のT様のためにも???
『これは絶対に行かなアカン店や!!!』と判断して予約の電話を・・・(^^ゞ
2週間前ながら、紅葉シーズン前と言う事か?ランチのせいなのか?
すんなりと予約が取れて一安心って感じでしたが、直前のお店で
予想外の時間を取られて10分程遅刻で店頭到着です~(泣
暖簾をくぐって格子戸を開けると、化粧室のあるエリアがあって築地の鮨桂太さんと
同じ様な造りで、もう一つの格子戸を開けての入店であります!
遅刻して焦りまくりで店内を見渡せば、12席のカウンターの内7席が
白人観光客の男女で埋まっており・・・流石世界的観光地である京都の祇園ですね(驚
大将のお話では、こちらを訪れる外国人観光客はホテルのコンシェルジュを
介して予約が入るとの事で、取りっぱぐれの無い良い客ばかりだそうです(笑
生ビール & 梅酒ロック×2 & 冷酒 “まんさくの花” (大将のお勧め!)
金額不明ですが、サービス料無しならこれで4300円+Taxですので、
祇園なら値付け程々の様な気もしますが???
こちらのランチ、現在は握り6000円・握り15000円・つまみ&握り15000円の
三択ですが、そう簡単に再訪出来る場所ではありませんので、
一度でレビューを完了すべくつまみ&握り15000円+Taxでお願いしました(@@;)
隣席の日本人は一見さんにも拘わらず夜の25000円+Taxを?食べてましたので、
そう言ったオーダーも可能なのかもしれません。

肝醤油・秋刀魚 :今年は秋刀魚不漁で生が丁度良い脂ののりで○

穴子:ちゃんとした仕込みをされた煮穴子ですが、冷たい状態で提供○
玉:プリンタイプに近いカステラタイプ◎

お椀:裏方が駄目な様で温いお椀で△
総括として、大将が非常に良い方で、質問にもちゃんと答えて&見せてくれます。
山葵、おつまみと握りで鮫肌・拘りの金属のおろし金を使い分けて居られましたし、
シャリもお酢2種類をブレンドした白っぽいモノと、お酢3種類をブレンドした
赤っぽいモノをネタによって使い分けると言う拘りぶりであります(嬉
お椀がかなり温かったのは残念でしたし、食器を中々下げてくれない
場面もありましたが、若いスタッフさんが不慣れって事かとは思われます。
江戸前の鮨を引っ提げて京都に乗り込んで短期間(一年足らず)で、
ミシュランガイドブックの☆獲得というのも納得のお店でですね(^_-)
隣の日本人が食べていた蒸しアワビ etc 気になりますので、
次回上洛時は夜に伺ってみたいものではあります(笑

偶々かもしれませんが、化粧室の便座がスイッチ一つで操作出来る
(化粧室にお金をかけている)お店はミシュランの☆が付いている事が多くて、
『ゆっきょし的ミシュランガイドブック☆のお店の法則?』と
呼ばせて頂いております~(笑・笑・笑
【追記②】
ランチは大満足ながら、終わったのが15:00近く(3時間近く在店)で
夕食の予約が19:00でしたので、大変な思いをさせて頂きました~(泣
