『:26021088,吉左エ門、]』さんへとても久しぶりに寄せていただきました。當店との出逢いは今から遡ること十有余年前のこと。レビューの更新は七年ぶりとなりますがレビューを上げてこそいないものの洛中での自分の隠れ家として利用させていただいている一軒です。店主の『荒木心也』さんは若狭の出身でありご実家も料理店を営まれているということもあり幼少時代から魚を見極める眼力を備えられた人並み外れた目利きの持ち主です。大阪の某関西割烹の店で長い間、二番手として店を支えられていたので料理人としての実力も折り紙付きであり尚且つ料理のレパートリーの幅も広く本来の意味合いでの割烹使いが出来る素晴らしい店です。コース料理というよりも當店ではアラカルトが優先、好きな素材を好きな調理法で作って貰い食べるというスタイルが最も愉しめる使い方と思います。今回のレビューは今年の九月中旬に寄せていただいた時のもの。用意されていた席は右腕が抜くことが出来るカウンターの末席。先ずはギン冷えで雑味の無い生ビールで渇いた喉を潤します。先付には漁が解禁になったばかりの『越前紅がに』の剥き身の『かにみそ』ベースのたれがけに日本人のDNAを呼び覚ます賀茂茄子(カモナス)の焼茄子(ヤキナス)と陸蓮根(オクラ)の焼浸しとシャインマスカットとクィーンルージュの白和えの三種盛からスタート。こんなつきだしが供されたならば料理を受け止めるのは日本酒に限ります。『緑川』の雪洞貯蔵酒 縁で受止めました。女将さんより「料理はどうされますか?」の問いにいつも通り「美味しいところを少しづつお任せで」と伝え後は荒木店主が食べ進み具合を見計らいながら料理が供されました。造りには小浜産の『ボタン海老(エビ)』に『〆鯖(シメサバ)』に『鯨肉(ゲイニク)』の三点盛。ねっとりと舌に纏わり付く甘みが強いボタン海老(エビ)に絶妙な〆加減の〆鯖(シメサバ)に鯨(クジラ)は滅多に口にすることが出来ぬ鯨(クジラ)の王様とも称されるシロナガスクジラでイワシ鯨(クジラ)やニタリ鯨(クジラ)、ミンク鯨(クジラ)等とは味も旨みも別格です。生姜(ショウガ)と山葵(ワサビ)を使い分け舌鼓を打たせていただきました。椀物代わりに供されたのはツキノワグマの『熊肉(クマニク)』と『松茸(マッタケ)』の小鍋立(コナベタテ)です。赤身肉にたっぷりと付いた脂身は融点が低く溶けて出たとろける脂の甘みと濃厚な旨味と松茸(マッタケ)の椀にたっぷりの野蜀葵(ミツバ)が加えられ一味唐辛子(イチミトウガラシ)と山椒(サンショウ)を適量落としいただきました。爽やかで軽やかで上品な口当たりの辛口の『黒龍』吟醸いっちょらいで受止め味わいました。熊肉(クマニク)と松茸(マッタケ)の小鍋立(コナベタテ)の余韻に暫し浸たり箸休め的に供された酒肴は『生海胆(ナマウニ)』と自家製の『唐墨(カラスミ)』と『鯨(クジラ)ベーコン』の三種盛です。生海胆(ナマウニ)はパリッとした焼海苔(ヤキノリ)に包み口に運び、唐墨(カラスミ)は一年熟成で塩の角が取れねっとりと歯に纏わり付き濃厚な味わい。旨味がありながらも見た目よりとさっぱりとした味わいの鯨(クジラ)ベーコン、凝縮された旨味が口の中に広がります。『淺茅生』特別純米生原酒を合せて楽しませていただきました。そして『伝助穴子(デンスケアナゴ)』のタレ焼です。伝助穴子(デンスケアナゴ)は一般的な真穴子(マアナゴ)3倍〜4倍の大きさの大穴子(オオアナゴ)で鱧(ハモ)同様、骨切りしつけ焼で供されました。続いて供された料理は陸蓮根(オクラ)が添えられた『蛸(タコ)の柔らか煮』です。仕上げに青柚子(アオユズ)が削り掛けられ香りが立てられた蛸(タコ)の柔らか煮は柔らかさの中にもクニュッとした咀嚼感が残されたもので柔らかさ一辺倒のソレとは一線を画す美味しさ。蛸(タコ)が美味しいのは勿論のこと煮汁(ニジル)がこれまた美味し。『菱蟹(ヒシガニ)』のケジャンは活きた蟹(カニ)を醤油ダレに漬け込んだ醤油漬です。自分の甲殻類(コウカクルイ)好きを覚えられている荒木店主は強肴代わりに供してくれました。両手で手づかみし一心不乱にむしゃぶりつきました。とろ〜りとした卵が別格の美味しさ。その後に『烏賊(イカ)の一夜干し』を供してくれました。噛めば噛む程に旨味のある一夜干しは『梵』無濾過純米大吟醸とともに味わい〆の食事は二段構えで鼻腔を擽る『松茸(マッタケ)ごはん』と汁物代わりにこの時期の荒木店主のスペシャリテの『月と鼈』です。月は月の輪ぐまの月でありすっぽんは言わずと知れた丸鍋(マルナベ)です。旨味と旨味を掛け合わせられた汁は滋養強壮マックス、其処に熊肉(クマニク)と鼈(スッポン)の脂と肉。中には低加水でパッツンパッツンの細ストレート麺が合せられた一杯を『知多』ハイボール片手に味わい美味しく楽しい時間を過ごさせていただきました。『吉左エ門、』さんの強みは市場を通さずに鮮度抜群で上質な魚介類が小浜から直送で送られてくることと其の素材を造りで味わったり焼いてもらったり、揚げて貰ったりとその日の気分で好みの調理法で作って戴けるところでしょうか?そういう意味合いでは京都広しと言えども當店ほど若狭湾の魚貝類を愉しめる店は記憶にありません。美人で気遣いの素晴らしい和装姿の女将に二番手で黙々と仕事を熟す心優しき隼人くん、そして懐深く大盤振る舞いの店主の荒木さんと三拍子揃った佳店です。馴染さんも多くフリーでの訪問で席を取ることは先ず至難の技とは思いますが、祇園でこういう店を一軒でも知っておくと株が上がること間違いナシかと、、、。
