二条通にオープンした寿司割烹のお店
入り口入ったところがテーブル席、奥がカウンター席になってます
店内はベージュと木目調の明るく清潔な感じ
カウンターの正面には緑地に葵と月をあしらったお洒落なデザイン
爽やかな風がさっと吹き抜けるような雰囲気です
最初は自家製胡麻豆腐のポン酢掛け
弾力が少なく、濃厚に香る胡麻がユニーク
そして山口産のポン酢がまた、強い胡麻の風味をキュッと味を締める感じでいい仕事してます(*´ω`*)
二品目は金目鯛の梅蒸し
ほろっと柔らかに崩れる身に纏わりつく出汁と梅の仄かな味わいが鯛の美味しさを引き立てていました
お寿司はヒラマサ、スズキ、マグロ、ヒラメ、剣先烏賊、トリガイの6貫
ヒラマサはキュッとした食感でほわんと溶けてく感じで、スズキはねっとりと柔らかくじわっと解けていくよう
濃い目の味でコクのあるインパクトを与えたマグロはふわっと蕩けるように消滅し、ギュムッとコシのあるヒラメはじんわりと柔らかな味わいを広げてくれます
剣先烏賊はもっちりと粘り腰でトリガイはクニクニと淡白な味わい
ネタの個性を引き出してますねぇ(^◇^)
〆は魚と豆腐のつみれ入り赤だし
濃い目の味わいが口の中をすっきりとリセットしてくれました

ランチは鮨ランチコース1種類のみ
まずは自家製ゴマ豆腐、山口産のポン酢がけ
コクのあるとろっとろのゴマ豆腐に甘みの強いポン酢
これがめっちゃ美味しい(*^_^*)
予想の遥か上でガッチリ心を捕まれました
続いて豚肉の梅蒸し
さっぱりとした梅の味香る上品な一品
これもいい感じでしたけどゴマ豆腐とお寿司が飛び抜けてたので印象的にはちょっと沈んだように感じてしまいました
メインのお寿司は6貫
この日出てきたのは
さわら、天然ぶり、とり貝、まぐろ、鯛、炙り鯖寿司
どれも美味しいです
特にすばらしいと感じたのがさわら、ぶり、鯖寿司
昆布締めされたさわらは口に入れると身がほろほろと崩れてご飯と一体に
ほのかな香りと共に丸みを帯びた魚の旨みを楽しめます
脂の乗ったぶりはぷりんとした食感とじわっとくる脂の甘味を一緒に
塗られた煮きりが味をきりりと引き立てています
炙り鯖寿司、匂いたつように濃厚な脂と噛み締めるほどに旨味の湧き出る身とのバランスがナイス!(*^_^*)
間に挟んであるザーサイもいいアクセントでした
魚はどれも手を加えてありまして、最後にひと手間入れて出してくれます
お鮨の余韻覚めやらぬまま最後に登場したのは魚のつみれの赤だし
濃い口のお出汁が魚の脂をさっと洗い流し、すっきりと食事を〆ることができました
