宿を早めにでで、 今日はこれで夜は東京に帰らないといけない。
金沢に来たら絶対お寿司屋さんは 行かないと!
美味しい食材がまってます。
近江町市場を散策して グッと我慢したけど
牡蠣だけ1個だけたべて来ちゃった。
尾山神社を散策
昨日からタクシーから、見た変わった建物!
お店はこの近くです。
12時に予約いれたので それまではぶらぶらとしてる

中を開けたら ハート型の能登毛ガニ寿司
これも温かいお寿司 毛ガニの身が凄い
甘味あるカニです。

少し甘めにたいてあります
★今旬の富山のホタルイカと能登のサヨリです。
サヨリってなんて美しいんだろう
綺麗な魚であっさりしてて好きなんです。
★鯵
こちらも味がついてるのでそのままいただけます。
★鰻巻き
★勝浦の60キロのマグロ
とろけるマグロ 旨いしかないのです。
★日本酒 宗玄
この器レース見たいになってて素敵です。
お店の方が
「お客様に合わせてお出ししてみました きっと喜んでもらえるとおもって」って
なんかこういうの素敵です。

甘エビの甘さとワタのほんのり苦みがいいですね

同じネタをつまみと握りで食べ比べをして
味を楽しめます
このお魚も初めて食べたとおもいます。
綺麗な白身で身が締まってる感じでとても美味しいです。

のどぐろの蒸し寿司は初めて食べるお寿司
のどぐろの脂が御飯に沁みて旨い
御飯は温かいのですが、なんか幸せな気分になった。
★こはだのまかない寿司
さっぱりしてる、こんな食べ方の面白い
★ねぎとろ
目の前でネギを細かく刻んで、トロをたたく
★あかいか
切り込みを入れてなんか針ネズミみたいな
切り口がたってる、少しあぶってレモン汁
柔らかく風味を楽しむ

さばき方が芸術的なんです
コリコリした食感が好き

山葵を多くするか、どうするかと
聞かれましたけど

目の前で職人技みながらいただけるの
