こんな人間が料亭に足を踏み入れてもいいのか?と自問しましたが・・・
好奇心からお店の方とメールでヤリトリをして丁寧に返信していただけました。
そして念願なかい・・

さすがに芸妓を呼ぶ嗜み心もありませんが、つば甚最古の間「梅の間」に通していただけました。
床柱には非常に珍しいザクロを使用し、書は横山大観が泊まったときに揮毫したもの。
ガッチガチです。ワタクシ。

付出は、あわびと大根のやわらか煮
やわらかいだけでない。独特のムニっとした歯ごたえ。大根の旨味とあわびの旨味がどちらも引き立てる。

好き放題蟹を入れて作った感ありありのしんじょ。贅沢だ。

甘海老ってそれほど美味しい食材じゃないと思ってたけど・・・覆されました。
これはつば甚さんだけでなく金沢全体で。
特にキジハタは格別だった。引き締まっているのにモッチリとしていて重みのある甘さ。
オリジナルの日本酒。もう頭狂いそう。

こちらの蓮根は・・・粘り気が強い!
同じレンコンと呼んでイイのかとも思えます。
香箱面盛り・ずわいの昆布船
季節の香箱は地元の人も大好きだそうで・・・まぁそりゃそうでしょう!
内子外子と身を一緒に食べる贅沢さ・・・今回の旅行の香箱狂いはココかはじまりました☆
ズワイとカニみそと昆布の味がしみ込んだ麩の旨さがたとえようもない。
どれも絶品。究極の食材と究極の板前が作る日本料理の極み。

もう・・・どう言っていいんでしょうか・・
本来・・料亭ってこうやって味だけを楽しむんじゃなくて持成しを含んだトータルでの評価なんでしょうけどね・・
当たり前ですが、味だけで楽しんでもじゅうぶん過ぎるほどでした。
でも器、数寄屋造り、庭園、美術品に加え芸妓など日本文化の集大成を全部で味わえたら・・・
それはもう自分が想像するより遥かにじゅうじつした時間が過ごせるんだろうなとも思いますが。
その一部だけでも味わえただけで人生のうちでも極上の時間でした。
