小樽食べ歩き四軒目
今回のメインである【伊勢鮨】さん
タイトル通りの予約困難な自他共に認める小樽No.1のお寿司屋さんです。
2012年度 北海道版ミシュランガイドでは 見事に1つ★を獲得♪
小樽を代表する名店です。
店内にはカウンターが2つとテーブル席がありますが、大将の小伊勢さんの握る個室的なカウンター席は予約困難w
今回、奇跡的にも大将小伊勢さんの握るカウンター席の予約に成功♪
緊張と期待でいざ入店♪
入店し、女性に名前を伝えると奥の個室的なカウンターに通される。
これは緊張する(笑)
やばいw
しかし、さすがです。
世論や冗談話を交えて、大将は気さくに話しかけてくれて、一気に和やかな空気を作ってくれました♪
今回、この予約に際して尽力してくれた仲間に感謝です♪
さて、ビールで喉を潤し
伊勢鮨さんのおもてなしのスタートです♪

うにの甘味とソースのバランスが良かった♪
ゼリーで固めてる見せ方からして仕事を感じました♪
【白魚の踊り食い】
活きてる白魚を出汁で飲み込む
2.3回、噛むんだけど活きてるから食感がおもしろかった(笑)
【小樽産ニシンの切り込み】
酸味は苦手なんだけど食べてみたら旨かった(笑)
【まつかわカレイ・ヒラメ のうに巻き】
これは大好物のコラボレーション♪
なまら旨かった♪

両方でうにを巻いて出す所がにくい(笑)
【5日間熟成マグロ 赤身・中トロ・大トロ】
熟成によって甘味が増してるのを感じた
舌触りもしっとりしていて旨かった♪
【にしんと数の子】
このパターンの親子はあまり食べなれてなかったので、噛み締めて食べました(笑)
数の子さんはやっぱ、うまいや(笑)
【アワビの柔らか煮】
味付けが上品で柔らかく旨かった♪
付け合わせのタコやいか飯的なのも絶品でした♪
仕事、感じるわー(笑)

柔らかくて甘辛で日本酒が進みます♪

半生加減でうまい♪炙りの香ばしさが塩で引き立ってる♪

身を炙り、香ばしく仕上げてあります。

タレをがっつりぬってるわけではないから素材の味が引き立ってふわふわ旨かった♪

完璧♪
甘くて甘くてとろけちゃいました(;´д`)
ミョウバン臭さ全く無し♪

えびの身に、ちゃんと仕事が見られていました♪
