今回ご紹介するのは、群馬県館林で二代目で都内や札幌で修行し故郷に帰ってきた新進気鋭の鮨職人萩原裕司氏が繰り広げる極上鮨のレビューです。(食べログ投稿時3・90)
群馬県館林といえば、徳川四天王の一人、榊原康政や5代目将軍徳川綱吉公にゆかりのある城下町であり、かつて花街として栄えた歴史があり最近は夏の暑さで有名な街ですね。
この館林には食通を唸らせる鮨屋が2軒あり、その1軒が今回レビューする【鮨恵三(めぐみ)】です。
大将の萩原裕司氏は寿司屋を営む家に生まれた二代目、高校卒業後、「日本橋蠣殻町の都寿司」と「札幌のすし善」などで修業を積み、2008年に独立した新進気鋭の鮨職人です。
お店は旧市街地の、少し路地に入った一角にそのお店はあります。
当日は19時に予約をして、お店の前の駐車場に車を停め白地のお洒落な暖簾をくぐります。
店内は無駄な物が一切置かれておらず白木のL字カウンターに9席と他に個室がある高級感漂いつくりで期待が高まります。
予約の段階でお願いしたのは¥7000のお勧めにぎり(前菜・握り・巻物・椀物・デザート)
先ずは相方が黒龍純米吟醸¥1200を1合お願いします。

実食した感想は、一貫一貫丁寧に仕事が施されていて大将の確かな技が伝わります。
また随所に拘りを感じ、シロイカの山葵には山山葵を用いるなど江戸前とは違う札幌の技が楽しめます。
ネタの仕入れ先を聞くと、築地との事で週に何度かは自分の足で仕入れに行っているそうで、隠れた地道な努力があるにせよお勧めにぎり、前菜・12貫・巻物・椀物・デザートとこの内容で¥7000はメチャ×2安く銀座で同等の鮨を食べたら3倍以上の金額が当たり前!
本当に客目線では、安くてネタ良し雰囲気良しの最高のコスパです(^0^)
徳川ゆかりの地・館林で彗星の如く輝く鮨屋【恵三】、目が離せない今後が楽しみな鮨屋です♪
