We regularly enter the mountains to maintain their ecosystem by walking around and responsibly foraging for wild vegetables and mushrooms. Sometimes, as part of our food education program, we take local children with us, ensuring that we do not bring anything that could become trash. At times, it feels as if the trees are communicating with each other, and I feel like a part of the great natural cycle that connects the mountains to rivers and then to the sea.

Savor the blessings from the mountains at our Chef's Table, available for one group per day.
A culinary inn with a 95-year history, originally established as a lodging for pilgrims visiting the Dewa Sanzan mountains: Mt. Gassan, Mt. Haguro, and Mt. Yudono. Since 2020, the fourth generation ha...s started a chef's table offering special courses focused on "mountain ingredients." From spring to summer, enjoy fresh wild herbs, mountain vegetables, and river fish; in autumn, savor mushrooms; and in winter, indulge in game such as wild duck and bear. Food enthusiasts from all over the country gather to experience the seasonal bounty of the mountains. In spring 2023, the chef's table was newly renovated, now featuring only 8 seats.
