We source live eels every morning, keeping them in underground water for two days to ensure they are fresh and free from any unpleasant odors before preparing them for you. Be sure to enjoy our proud eel dishes, whether it's unaju, unadon, or other specialty items!

Our pride lies in the secret sauce for grilled eel that we've been perfecting since our establishment! Over the years, this sauce has developed a rich flavor and aroma from the umami of the eel, enhancing its natural sweetness and creating a light yet delicious taste. We source our fragrant and flavorful rice directly from Nagano Farm in Yamagata, where it is stored at low temperatures in its husked state and milled fresh upon shipment. Additionally, we procure our sansho pepper directly from a cooperative in Kochi Prefecture, and we grind the whole peppercorns just before serving to maximize their aroma and spiciness.
