The menu is so popular that there is a sign in front of the store's entrance that says, ``Chinese noodles only, no.'' Since its opening in 2003, it has been served as a finishing touch after drinking. A proud dish that was taught by a master who was known as Ramen demon.

The owner, Masahiko Kodama, said that when he was a child, the last time he went out to eat in his hometown of Niigata was at a ``Yakitonya.'' ``I made Yakitori (grilled chicken skewers) to accompany my father's alcoholic beverages on behalf of my mother, who was often sick, and she received praise, and from then on, Yakitori (grilled chicken skewers) became something special to me.'' Afterwards, he worked at a chicken restaurant, and there is an anecdote about his filial piety that when he opened this restaurant, he received a letter from his father's name in the restaurant's name.

The chicken used is ``Koshi-no-dori'' from Niigata Prefecture and ``locally-raised chicken'' from Chiba Prefecture, depending on the part. The skewers that are carefully pierced every day are larger than usual, and are stuffed with meat and grilled so that the delicious meat juices come out the moment you bite into them. Only the liver has sauce and salt, but all Other parts are salted. We use pure sea salt from Niigata's ``Sasagawa Nagare'' seawater.

Hosomaru, a precious Kishu Binchotan charcoal, is suitable for grilling Yakitori (grilled chicken skewers). Specify the ``Hosomaru'' of Umame oak, which has this fine texture. The fat from the chicken drips onto the charcoal, and the smoky aroma that rises up again is mixed with the slow cooking process, which enhances the flavor of the chicken.
