Another specialty is the paitan soup, which is made over 4 hours using 50 chicken bones. Everything at Torisho begins with this dashi, which is drawn every day. It's emulsified and cloudy like pork bone soup, but it's made from 100% chicken bones and has a surprisingly refreshing aftertaste! You can enjoy it in any form you like, such as Oyako-don (Chicken and egg bowl), oyakodon, or Ramen.
