ChefYoshiteru Ikegawa - A craftsman who perseveres with determination
Born in Tokyo in 1972. Although he dreamed of becoming Yakitori (grilled chicken skewers) Yakitori (grilled chicken skewers) in his teens, he first got a job as a salaryman, as he wanted to become a yakitori chef who could understand the feelings of his customers. At the age of 28, he became an apprentice to the renowned Yakitori (grilled chicken skewers) chef Yoshihito Inomata, and spent seven years studying under him. In 2007, he went independent and opened Torishiki in Meguro. It was awarded one Michelin star in 2011, and has maintained that star to this day.
