We work toward coexisting with food producers and nature while aiming to reduce food miles and food waste. For example, our signature Sea Bream Chazuke features rice sourced directly from producers who deeply consider the natural environment and rice cultivation practices. We also elevate parts of the Sea Bream, such as the head and collar, into a dish served in our course menu. Additionally, we use the rice bran produced during milling for pickling and as a preparation ingredient, further minimizing waste.
We use authentic Koshihikari rice, which we believe has the highest levels of color, aroma, sweetness, and strength in each grain. Most of the Koshihikari available on the market today is scientifically and legally different from the varieties that became popular nationwide for their deliciousness. This rice is difficult to cultivate and cannot be traded through JA (Japan Agricultural Cooperatives). Therefore, we source directly from producers who deeply consider the natural environment and rice cultivation practices, aiming to preserve Japan's original ingredients.
