We use dried food specially formulated for our store from a long-established dry goods store in Kyoto. We purchase mackerel flakes made using traditional methods to bring out the umami flavor, plump sardines, sardine sardines, dried anchovies, kelp, etc. We have a total of 10 combinations of pork bones, chicken bones, and vegetables, which are unusual for Monja.
