伝統を継承する新進気鋭の江戸前鮨は、巧みな技と若きセンスで織り成す至高の逸品。
日本橋の名店で修行を積んだ期待の若手鮨職人、橋本裕幸氏が2014年に独立。江戸前鮨の基本を守りながらも、個性ある握りとつまみを作り出す。素材にあわせて絶妙な加減で〆、熟成、燻すなどし、味わいに緩急をつけるコースは、ゲストを最後まで飽きさせることなくテンポよく進んでいく。ゆったりと寛ぐことのできるカウンターは8席のみの特等席。ヒバ材の白木に映える、こだわりの器や酒器で味わう酒もまた美味だ。
