We pay particular attention to the materials, grinding method, and beating method. We blend buckwheat flour from Ibaraki and Tochigi in the fall, and Nagano and Fukui in the winter, depending on the flour condition that day. Taking advantage of the fragrant characteristics of buckwheat flour, we purposely use 28% instead of 100% to create a flavor that goes down smoothly. The soup stock made using only thickly shaved dried bonito flakes is a new era Edo soba soup that takes into consideration the compatibility. We want you to enjoy delicious soba noodles no matter when you visit us, so please enjoy our delicious soba noodles.

The chef personally examines seasonal ingredients such as vegetables and fish at the market every day. We are particular about the freshness of the stock, which we consider to be the most important ingredient in cooking, and we go to the market frequently to purchase even small amounts. Rather than reusing soup stock, we use a different soup stock for each dish, creating a flavor that even basic dishes will never get boring. Our sushi is made to perfection in every detail, and we are proud of the quality of our sushi, which takes into account the cooking method, vinegar composition, salt content, rice production area, and other aspects, as well as the compatibility with the fish and balance.
