All side dishes such as gari, pickles, and desserts are handmade and have been very popular. Please note that the store has hardwood floors, and customers are asked to remove their footwear. Summer is chilly. In winter, underfloor heating will keep your feet warm. Especially in the winter, you can stay warm without using the air conditioner, so hot air won't hit the fish on the counter, preventing them from drying out. |

With the desire to enjoy freshly made sushi, our restaurant offers sushi hand-delivered. This masterpiece is made using only wild fish and is seasoned with simmered soy sauce, sudachi, salt, etc. depending on the type of ingredients. If you put the fluffy sushi rice on a rice table, it will sink under the weight of the toppings. When you put it in your mouth and taste it, it has a consistency that makes you feel the reason why.

At our restaurant, we use a variety of Edomae cooking methods. Also, instead of using an electric refrigerator, we use an ice refrigerator filled with ice. The moisture released when the ice melts keeps the fish in the best conditions. (Incidentally, Edomae is a type of sushi that uses fish caught in Tokyo Bay, but in the past, ordinary people didn't have ice or transportation to transport it quickly, so they had to somehow make the fish last longer and taste delicious.) The methods of eating include boiling, vinegar, salt, and pickling.)
